The White-Green group includes garlic,onions,chives,and asparagus. They all have sulfur compounds called allyl sulfides. When you eat asparagus the sulfur compounds make your urine smell of sulfur. The most famous of this group is garlic. To get the health benefit of garlic, you should chop the garlic or use chopped garlic stored in a refrigerated jar. Chopping releases the allyl sulfides from their stored state in the whole garlic. If you cook the garlic first to make a roasted garlic butter, the enzyme needed to release the allyl sulfides are destroyed and you don't get the health benefit or the sharp taste. The reason you cry when you cut onions is that crushing the cells activates the enzymes that release the gases that make you cry. In the Middle Ages, people would wear a string braided with garlics as a necklace to ward off evil spirits and vampires, but today these smelly vegetables are included in the diet for their antioxidant and heart health benefits.
