It is extracted from the stems, but is found in all parts of the pineapple. As a supplement, it is used as a digestive aid. Our stomachs digest protein using a pre-enzyme made in stomach cells called pepsinogen which is activated by stomach acid into the active enzyme called pepsin. With aging, stomach acid production falls, and supplements like BROMELAIN are used to aid protein digestion. In China and South America, it was used to reduce inflammation and swelling as a traditional medicine. An interesting fact is that the enzyme is inactivated by cooking. If you add uncooked pineapple slices to gelatin, it will digest the gelatin and your Jello desert will turn into a liquid mess. BROMELAIN is different from papain in papaya which is also a protein digesting enzyme.
