NUTRITION WHY’S #21: FAT AND IMMUNITY- You need to balance your intake of the omega-3 and omega-6 fatty acids in your diet. Both are converted by the same enzymes to smaller compounds that either promote inflammation (from omega-6) or are anti-inflammatory (omega-3). Inflammation is a key step in healing wounds and stimulating defenses against threats to your health. However, modern diets have led to obesity which stimulates inflammation and to very high levels of omega-6. For example, corn oil is 60% linoleic acid and is hidden in processed foods such as cookies, cakes, pastries, and some ice creams. To balance omega-6 and omega-3 eat more fruits and vegetables, and reduce your intake of processed snack foods. Then eat ocean-caught fish three times per week and take fish oil supplements every day. By eating less omega-6 fats, you will increase the effectiveness of your omega-3 from fish oil supplements and fish. You can use olive oil (but not too much at 135 Calories per tablespoon) which have omega-9 fats that do not affect the balance of omega-3 and omega-6 fats.
