NUTRITION WHYS?: CARBOHYDRATES – "Carbs" are found in many foods and get their name from having carbon, hydrogen, and oxygen, but not nitrogen which is in amino acids and protein. Carbohydrates are found in many foods and range from simple sugars to long chains in starches and fibers. Carbohydrates are digested all along the gastrointestinal tract. The simple sugars are digested in the mouth and stomach and enter the blood stream rapidly from the small intestine within minutes. They include table sugar called sucrose, glucose, fructose, lactose, and high fructose corn syrup. I don't like the term complex carbohydrates because the category includes chains of glucose called maltodextrin which dissolve into single glucose molecules in the stomach and act like a simple sugar. Larger carbohydrates like starches are more slowly digested while fibers include partially digestible and indigestible carbohydrates some of which are digested by the gut bacteria.
