NUTRITION WHY'S: CARBOHYDRATES AND OBESITY- The extra CALORIES from hidden sugar in processed foods and colas add up quickly and in the absence of exercise to burn those calories leads to excess body fat and obesity. The increase in sugar intake between 1970 and 1994 directly paralleled the increase in obesity. Many people focus on fructose, but the real problem is hidden sugars. Sucrose or Table sugar is made of glucose and fructose. High fructose corn syrup is the same thing. You start out with glucose from corn syrup and convert half of it to fructose using an enzyme called invertase. I want to emphasize that it is not the chemistry but the amount. It is true that fructose is sweeter than sugar so it can provide the same sweetness with a lesser amount. Fructose does not raise blood glucose but goes to the liver where it turns to fat when there is too much of it. Athletes take glucose during exercise for energy and burn it so it is not stored as fat. Get rid of the hidden sugar in snack foods and replace them with colorful fruits and vegetables.
